Flitch the Old-fashioned Potato Candy

Ingredients for Potato Candy
- 1 potato (about the size of an egg)
- 1 pound 4X confectioners sugar
- Vanilla extract (optional)
- Peanut butter
Start off by boiling potato until soft and peel.
In a dish, mash potato smooth with a for or run it through a ricer like the one below.

Begin mixing in confectioners sugar.
Continue adding sugar and mixing until the mixture is the consistency of dough. If desired, add a few
drops of vanilla.
Sprinkle a little 4X sugar on a cutting board, put the dough between two sheets of wax
paper, and roll the mixture to a 1/4 inch thickness.
Spread peanut butter atop the rolled mixture. Roll up the sheet, loosening it from the board with a knife as you roll. Cut into slices
and serve.
