I will start off by stated that I love Pecan Pie. I mean if there are several pies on the table, Pecan is the one I will pick every time. And to think that there is a healthier way to rationalize eating pie. That is a no brainier for me.

Well, Yes, it may still have all the other ingredients in there as far as pie is concerned. But anyway to add some more protein to all that sweetness, I’m in.

Ingredients

  • 1 cup cooked pinto beans (may use 1, 16 ounce can)
  • 1 can coconut
  • 4 eggs
  • 3 cups sugar
  • 1 tablespoon vanilla
  • 2 sticks butter
  • 3 unbaked pie shells

Method

Step 1

Mash beans (use the juice),beat eggs.

Step 2

Add all other ingredients,mix well.

Step 3

Pour into 3 unbaked pie shells.

Step 4

Bake at 45 minutes to 1 hour at 300 degrees.

Step 5

May be wrapped after cooling to freeze.
