It was more like a true fruitcake. It was perfect!

She did mention that she had been making her aunt’s homemade fruitcake recipe for over 20 years before trying this no-bake fruitcake recipe. We think she knows what she is talking about when it comes to a fruitcake.

Ingredients for the No-bake Fruitcake

  • 2/3 C evaporated milk
  • 2 C Mini marshmallows
  • 6 T frozen OJ concentrate
  • 3/4 C Chopped dates
  • 3/4 C raisins
  • 1 C walnut pieces
  • 1 C mixed candied fruit
  • 1/4 C candied cherries
  • 4 C graham cracker crumbs
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ground cloves

How to Make the No-bake Fruit Cake

  • Start with a large 3 quart saucepan on medium heat and add to it the first 3 ingredients (2/3 C evaporated milk,2 C Mini marshmallows,6 T frozen OJ concentrate) stirring until the marshmallows are melted.
  • Remove from heat.
  • Stir in the next 5 ingredients (3/4 C Chopped dates, 3/4 C raisins, 1 C walnut pieces, 1 C mixed candied fruit, 1/4 C candied cherries)
  • Mix the last 4 ingredients together until well blended. (4 C graham cracker crumbs, 1 tsp cinnamon, 1 tsp nutmeg, 1/2 tsp ground cloves)
  • Add the graham cracker and spices mixture to the saucepan and stir until well combined.
  • Press this mixture into a ring mold like the one below or into a wax paper lined loaf pan.
  • Chill a minimum of 48 hours.

Notes on this Recipe

This recipe for fruit cake can be doubled. As it is it will make a 3 pound no-bake fruitcake. Double the recipe for a 6 pound loaf, just use 2 pans.
