What makes this meatloaf moist is the bread and milk mixture.  I’ve always had dry meatloaf until I discovered this tip. Perfect every time!

Ingredients

  • 1 1/2 lbs ground beef
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1/2 red onion
  • 1 tsp minced garlic
  • Seasoning to taste
  • 3 slices of bread, crust removed
  • Splash of milk
  • 2 fresh eggs, beaten
  • Panko bread crumbs

Method

Step 1

Take the crust off of the bread and add to a large bowl. Add a few splashes of milk, until mushy

Step 2

Finely chop bell peppers and onion. Add to the bread mixture

Step 3

Add the ground beef and minced garlic

Step 4

Add the 2 beaten eggs and enough panko bread crumbs (or bread crumbs of your choice) to pull the mix together, about 1/2 a cup, add more if needed

Step 5

Add Salt and pepper, garlic powder and onion powder

Step 6

Bake on a rack on a cooking sheet pan, uncovered, at 375 for an hour. Cooking times may vary. Add ketchup to the top and return to oven for 15 minutes
