I couldn’t believe how good this recipe was. It took me about 30 minutes from start to finish. I didn’t use the full amount of meat because we ate some of the meat mixture earlier with a Southwest Seasoning from Pampered Chef and they were really good too.
I think you could stretch this meal out for more people by adding 2 cans of veggies and more noodles than what is called for. That’s the great thing about cooking in your own kitchen, you can do it just the way you want!

He gave it 2 thumbs up! I’ll bet the grand-kids will like it too since it has noodles and small soft veggies. I think it would be equally good with just a can of peas if you don’t have mixed veggies.
Ingredients
- 1 portion hamburger meat mix (recipe link above)
- 8 ounces egg noodles (usually 1/2 bag)
- 1 can mixed vegetables OR 10 ounce bag of frozen mixed vegetables (cooked)
- 1/2 Cup shredded cheddar cheese
- 2 TBSP chopped fresh parsley
Method
Step 1
Add thawed Hamburger meat mix, cooked noodles and vegetables to a microwave safe dish.
Step 2
Add cheese and top off with parsley.
Step 3
Microwave in 2 minute increments until cheese is melted on top and the rest is heated well. Do not stir.
Step 4
Serve right from the dish.
