I think these Parmesan and parsley tomato slices would qualify as keto and if not, low carb for sure. Whatever you classify them as, I think we can all agree that they are delicious! This was invented after falling in love with Robert Young’s recipe for tomatoes that had the center scooped out and filled with cheese and herbs then topped off with crushed crackers or bread crumbs. I just took the carbs out and ensured that there would be plenty of cheese and herbs in every bite.
Ingredients
- firm ripe tomato
- grated Parmesan
- fresh parsley or your favorite herb
Method
Step 1
Preheat oven to 350 degrees and cut tomatoes into 1/2 inch slices
Step 2
grate Parmesan cheese and add some to each tomato slice
Step 3
chop fresh parsley or herb of your choice and add to top of cheese
Step 4
bake at 350 degrees until cheese starts to bubble and brown.
Step 5
allow to cool slightly before serving
