Day 4 and I have hooch on top of mine again and a definite more pronounced sourdough aroma today. Stirred the hooch back in and ready for today’s feeding. Stick with me…we’re over 1/2 way there. We have 1 more day of the same procedure and then it changes up a bit for the last 2 days.
1. Stir it up to reincorporate any hooch you may have on top.
2. Pour off 1/2 your starter and either discard or pour into another container.
3. Add 1 cup flour and 1 cup water. Stir well to completely incorporate everything.
4. Cover and let sit on the counter for 24 hours
